It didn't occur to me how much I enjoy bread until I tried the Roasted Grape & Brie Crostini with Honey and Sea Salt from Ambitious Kitchen. Oh my goodness-it really is heaven in a bite. I used up half my stick of slicing brie in that one sitting. Staring at the TV while munching on the fresh, fluffy bread with melted brie., while the Mets were winning--it  really was a perfect moment.
Anyway, after the bread disappeared from the kitchen, I had a sudden urge for some garlic bread. For the third time this week, I headed over to the grocery store to pick up a fresh loaf
There is nothing likehomemade garlic bread to snack on while dinner is lurking.
 
Garlic herb cheesy bread:
1/4 loaf Italian bread
1 tablespoon unsalted butter, softened
Mrs. Dash garlic and herb seasoning
parmesan cheese
fresh mozzarella cheese
 
 
1. Preheat oven to 350 degrees.
2. Slather the bread with butter and sprinkle the seasoning to coat the top.
3. Add the parm and mozzarella cheese.
4. Cook in oven for 8 minutes.
5. Enjoy!

I haven't had many exciting food adventures recently to report back on. My meals have been pretty mundane and lackluster. I did get to browse through Costco last Saturday and taste all the different samples they were offering but nothing too fancy. Here are some meals/snacks I have had recently.

It is no secret I fully enjoy home cooked meals. Unfortunately with both parents working growing up, I rarely had the chance to experience some of the homemade goodness that others eat regularly. However, my friend's parents are quite the chefs and I have eaten numerous meals at their houses.
My friend's mom makes perhaps the best pizza I have ever tasted. It has a kick from the spicy chicken that of course is topped with gooey mozzarella cheese. I tried to re-create the dish.. and I succeeded!


 
Buffalo wing chicken pizza:
1 package ground chicken
1 teaspoon grill seasoning
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
2 tablespoons wing sauce
1/2 ball of fresh mozzarella
thin pizza crust-(Boboli or whichever you prefer)
1. Set a non-stick skillet with a teaspoon of olive oil to medium-high heat. Preheat oven to 375 degrees.
2. Add the chicken and caramelize for around three minutes. While it is cooking, add the spices (garlic powder, Italian and grill seasoning)
3. Reduce heat to low.
4. Place crust in oven for 5 minutes to crisp up a bit.
5. Break up chicken and mix around in the pan until fully cooked. (around 10 minutes)
6. Add sauce and mix around
7. Place on pizza and top with cheese.
8. Set in oven until cheese starts to bubble (5-7 minutes)
 
 
I am obsessed with these-they are organic, real fruit ropes. This snack is made with all natural ingredients starting with organic apple puree and organic apple juice concentrate as its base. Tastes just like candy and each stick equates to one serving of fruit.

Uy it's stressful growing up-but in a good way. Facing the real world may be an intimidating task at hand but it brings excitement as well. To relieve some of the tension, I drove over to Fairway to do some shopping. I didn't buy tooo much, but it will suffice!

Yes that tiny golden round fruit is an aprium (apricot and plum)

Just look at the seltzer flavors.. cucumber melon and pomegranate sangria

Those spicy wasabi edamame snackers seriously clear your nasal passages!

Atlantic City never gets old. My friend and I visited there on Thursday for Bacon Week.. yum. The problem? We never ate any bacon-fail. I did however eat some delicious food, plus I got to spend time on the boardwalk in the beaming hot sun.
 
Lunch: Pastrami sandwich on rye with mustard. My motto: the fattier the better! From A Dam Good Deli in Tropicana
Dinner: Chicken fajitas with a side of mashed potatoes and broccoli (I know, how Mexican of me) from Rainforest Cafe
Of course you can't forget about the spinach and artichoke dip
Breakfast: Monkey bread and stuffed challah french toast from Teplitzky's

It's always nice to be around family. Today we went to the Mets game to celebrate my cousin's birthday. The atmosphere was awesome, the game however was a disgrace. We lost 11-2 and as the middle of the 8th rolled around, a lightening bolt struck followed by a boom of thunder. We ran for cover and made our way towards the car. So, the outcome of the game wasn't great, but my pulled pork sandwich was quite gratifying. The pork tasted as if it was slowly cooked in BBQ sauce, sweet and smoky, spicy and tender all at the same time. UGH I wish I could have another one right now.

My mom may be one of the pickiest eaters I know. There are times where she surprises me and likes something out of the ordinary (anchovies cooked in garlic oil. Don't worry the end product just tastes like salty nuts). But when she finds something she enjoys eating, she can almost outeat me...almost.
She happens to love the potaoes I make which is funny since I just threw seasonings together. So here they are, my mom's favorite potatoes.
 
 
 
My mom's favorite potatoes:
1 large potato, peeled and cut into matchsticks
1 teaspoon seasoned salt
1 teaspoon grill seasoning
1 1/2 teaspoons of Mrs. Dash garlic and herb seasoning
2 teaspoons onion powder
oil-whichever you have on hand, I used grapeseed
 
1. Preheat oven to 350 degrees.
2. Pour seasonings over potatoes in pan.
3. Add oil to cover potatoes.
4. Mix all the potatoes together until even coated.
5. Set in oven and cook for around 30-35 minutes until brown on the edges.

There is almost too much cuteness to handle in this video
It was silly of me to be skeptical whether or not Fairway would carry Larabars. After trying one of the bars over a month ago, it left me curious to try out the rest of them. When I faced the wall in the store, I beamed with excitement. I decided on the coconut cream pie (delicious) and the cherry pie (tart but flavorful). It doesn't hurt that these bars are all natural and easy to eat on the go.

I haven't really shared much about myself despite this blog running for over a year now. Here are some facts you guys may be interested to know:

Whether we admit it or not, at some point in time we have all made our way to a drive-thru of a McDonalds, Burger King, Taco Bell, etc. However, since we are now accustomed to a healthier lifestyle, our fast food days are in the past. But when it comes down to it, there is nothing like sinking your teeth into a good ol' Big Mac. The Mac sauce is out of this world and it meshes great with the American cheese, pickles and burger itself. Now I have you thinking about having one, don't I? Don't fret, I have come up with a figure friendly alternative. Oh yes, I went there.
 
My Veggie Big Mac:
 
1 veggie burger of your choice, or you could cook up a chicken or turkey burger.
1 cup cole slaw mix
1/4 cup Thousand Island dressing
1 teaspoon yellow mustard
1 slice deli American cheese
2 pickle slices.
1 bun of choice
 
 
 
1. Cook up the veggie burger according to package directions.
2. Mix together the dressing and mustard and toss to coat the cole slaw.
3. Place veggie burger on bun, add cheese, cole slaw ( you don't have to add the entire cup) and the pickles.

Hi, I'm Lindsay and I am a hot mess whenever I am in the kitchen. Each time I step up to the plate to cook a fabulous dish, it is inevitable something goes awry. For instance, last night I was making pizza sauce and accidentally touched the rim of a hot pan. I quickly flinched and pizza sauce went flying into my hair. This type of occurrence happens pretty frequently for me as I let my excitement (or clumsiness) get the best of me. Don’t worry, I still finished my task at hand and ended up with this lovely cauliflower pizza crust topped with pepperoni and sautéed mushrooms.
Pizza sauce:
1 small can unsalted tomato sauce
1 teaspoon italian seasoning
1/2 teaspoon minced onion (dried)
1/2 teaspoon Mrs. Dash original blend
1/2 teaspoon sugar

Mix all together and spread on your favorite pizza crust




You guys have to check this out. If this doesn't make you want to travel the world.. I don't know what would.

If you haven't tried these yet... you must, unless you don't like pretzels of course. I have always liked pretzels, but if I was going to grab something on the-go, it would probably be baked potato chips or snappea crisps. However, after I tried these pretzels last year, baked potato chips are a thing of the past. (Not really, but definitely not as popular in my book.)
Pretzel "shells" are hollowed out pretzels that intensify the flavor of well, the pretzel. They are extra crunchy and extra delicious. The serving size is 12 pretzels, but that easily becomes 24 pretzels, then 40 pretzels until you realize half the bag is gone... whoops. They are addicting and worth trying out.

Dinner tonight: Spinach pie platter with rice, broccoli and chicken lemon rice soup from Mixed Grill. I wrote a review on this place last year.

I showed a picture the other day of the olive bar at Fairway, however I don't believe it did it justice. If you love olives, you are in for a treat. It is pretty much olives galore if I do say so myself. Here are just a few of the olives they sell.

Macaroni Grill is one of my favorite restaurants. I was so upset when the one near my house shut down. If you get the chance to go, make sure to create your own pasta dish!
By now you guys are pretty much fully aware of my love for Fairway. There are just so many great options that are offered. Here is just one side of their olive bar. There must be 20 different olives to choose from!
